an actual quote from a friend’s nephew who admonished his mom for making the grilled-cheese too cheesy, thus rendering it inedible. it is also a shout-out to 630 who i often say “eats like a 12 year old” because 630 likes to eat all things tagged as “comfort food”. these and other connoisseurs will be happy to know that the grilled cheese is growing up and making its way onto the plates of some of the most posh plates in country, according to an article in usa today. today’s grilled cheese the “simple sandwich your mother used to make. restaurants from las vegas to seattle to new york incorporate ingredients such as truffles, chardonnay, foie gras butter and fried duck eggs into their fromage creations…[chefs say that] there’s a lot of psychological things going on when you eat a grilled cheese sandwich. it reminds you of being a kid, of the simple things in life. you feel good all over” — a while back we talked about our need to feel good and about the renaissance of some comfort brands.

of course, you don’t get something for nothing. comfort costs:

my only question is why is this story hitting now? seems like a definite winner in say, january.
